Spring Detox Recipe
Spring is the perfect time to begin introducing a few more raw fruits and vegetables into your diet. As the weather begins to warm, the digestive system is ready for cooler foods which are full of vitality and nutrients.

Quinoa Avocado Salad
This salad is amazing hot or cold. It gives you a protein boost and the avocado and olive oil which are great healthy fats, will help you remain fuller longer. This salad is wonderful for people who are not fond of leafy greens and will help you easily sneak more veggies into your day. Serves 2.
- 1 cup of quinoa
- 2 cups of water or vegetable broth
- 1 red pepper
- 1 cucumber
- 1 shallot
- 1 garlic clove
- 1 lime
- 1/2 cup cilantro
- 1/2 cup olive oil
- 2 ripe avocados
- sea salt
To make the quinoa:
Place 2 cups of vegetable broth or water in a pot. Add 1 cup of quinoa. Bring to a boil
Let simmer for 15 minutes until fully cooked.
In a small bowl mix lime juice, 1 finely diced shallot, 1 finely diced garlic clove, 1 teaspoon of sea salt. Stir to combine. Add 1/2 cup of olive oil. Whisk to combine.
In a medium bowl add the quinoa, 1 finely diced red pepper, 1 finely diced cucumber, 1/2 cup chopped cilantro. Add dressing and mix to combine.
Place into a serving bowl and add sliced avocado. Garnish with more cilantro and serve!
